Chicken & Feta Sheet Pan

Reminiscent of the viral feta pasta, this recipe is a super easy and delicious dinner for busy nights! This Chicken & Feta Sheet Pan recipe is a nourishing & satisfying meal guaranteed to be a crowd pleaser.

Nutritionally balanced & satisfying

A delicious and easy week night meal complete with melty feta cheese & lots of roasted veggies. This meal is nutritionally balanced, as it provides everything you need to feel full & satisfied.

The 3 main components of a meal that makes it nutritionally balanced are protein, complex carbs/fibre, and fats. This meal has all three! Chicken provides a source of protein, fibre and complex carbs from the vegetables and potatoes, and fat from the feta cheese and olive oil.

Ingredients in Chicken & Feta Sheet Pan

You’ll need:

  • cherry tomatoes, red bell peppers & baby potatoes
  • dried herbs: thyme, parsley, red pepper flakes, paprika
  • salt
  • fresh garlic
  • feta cheese (the one packed in brine)
  • boneless, skinless chicken breasts
  • olive oil

You’ll also need parchment paper, a frying pan, and 2 standard size baking sheets (or 1 very large baking sheet).

Chicken and Feta Sheet Pan Meal

A delicious and easy week night meal complete with melty feta cheese & lots of roasted veggies. This balanced meal is filling, satisfying & perfect for any night!

Ingredients
  

Veggies & Feta

  • 1 pint cherry tomatoes
  • 2 red bell peppers, sliced
  • 2 cups halved baby potatoes
  • 1 tbsp olive oil + more for drizzling
  • 1/2 tsp each of dried thyme, parsley
  • Pinch salt & red pepper flakes
  • 2 large cloves garlic, minced
  • 200 g block of feta cheese (the one packed in brine)

Chicken

  • 1 ½ lbs boneless, skinless chicken breasts, pounded until 1/2-1/4 inch thick *3 large chicken breasts
  • 3 tsp garlic powder
  • 1 ½ tsp each of dried parsley, paprika
  • 1/2 tsp each of dried thyme, red pepper flakes
  • 1/4 tsp salt

Instructions
 

  • Preheat the oven to 400°F and line 2 baking sheets with parchment paper.
  • Add the tomatoes, bell peppers and potatoes to a large mixing bowl. Add 1 tbsp of the olive oil, the thyme, parsley, salt, red pepper flakes and the garlic. Mix well and spread out onto the baking sheet.
  • In the middle of the baking sheet, move some of the vegetables out of the way and place the block feta cheese. Drizzle the feta with some olive oil. Bake for 40 minutes, flipping the vegetables halfway through. The feta will brown around the edges slightly.
  • While the vegetables and feta bake, prepare the chicken. Mix the spices together and rub on either side of the chicken pieces.
  • Heat a large frying pan over medium heat. Once hot, add a drizzle of olive oil to coat the pan and place both pieces of chicken. Sear for 3-4 minutes per side until golden brown. Place the chicken on the other lined baking sheet.
  • Place the chicken in the oven and bake for 15-20 minutes until cooked through (internal temp reaches 165°F). Tip: Have everything ready at the same time by placing the chicken in the oven while the vegetables have 20 minutes left on the timer.
  • Break down the block of feta with a fork, mix with the vegetables if desired and enjoy!

So many uses for this humble salad. It great on its own or as a filling for tacos (used in my blackened fish taco recipe!)

Use it in:
- As a salad, or mix into salad greens
- As a side dish
- To top rice bowls, burrito or taco bowls
- As a taco filling
- Add to sandwiches or wraps for crunch

Ingredients: 
- 2 cups each of finely sliced red and green cabbage
- 1 large carrot, shredded 
- 2 apples, sliced into matchsticks 
- 1/3 cup chopped fresh cilantro
- 3 green onions (white parts) 
Vinaigrette:
- 3 tbsp Apple cider vinegar
- 3 tbsp olive oil 
- Juice of ½ a lime
- 1 ½ tbsp sugar or honey
- Salt and pepper

Directions: 
1. Place all the ingredients for the coleslaw in a large mixing bowl. The pumpkin seeds are optional but add a crunch!
2. In a small bowl, mix together the ingredients for the vinaigrette before pouring over top of the coleslaw mix.
3. Serve immediately or store refrigerated in an airtight container. Enjoy!

You need to try these blackened fish tacos. They are super simple to make and only take about 15 minutes from start to finish and you have a great filling for tacos, rice bowls or all on it’s own!

Ingredients:
* 2 filets basa fish (or preferred firm white fish)
* 1 tsp paprika
* ¼ tsp cayenne 
* ½ tsp garlic powder
* ½ tsp dried oregano
* ½ tsp cumin
* ¼ tsp onion powder
* Pinch salt and pepper 
* 2 tbsp avocado oil or cooking oil of choice

Directions:
1. With a paper towel pat the pieces of fish dry. In a small bowl, mix together the spices including salt and pepper. 
2. Sprinkle the seasoning over both sides of the fish filets and rub it in with your hands. 
3. Heat a medium skillet over medium- medium low heat. Once hot add the oil, heat for a moment before adding the seasoned fish filets. 
4. Sear for 3-5 minutes per side until deeply browned and cooked through, reaching an internal temperature of 145 degrees F.
5. Remove from heat and use for tacos, rice bowls or on it’s own. Enjoy!
